If you live in the North region, you are certainly used to cupuaçu recipes. However, for much of Brazil, the fruit remains a mystery. To take cupuaçu to every Brazilian's home, here we share this recipe for a traditional cupuaçu cake that is very easy to make! It contains cupuaçu pulp, which can be fresh or frozen (in this case, let it defrost first). The preparation is done in a blender and the cake is baked for about 40 minutes in the oven.

Ingredients for making cupuaçu cake:

 2½ cups of wheat flour (350 grams)

 2 cups of sugar (320 grams)

 1½ cups of cupuaçu pulp

 ½ cup of milk (120 milliliters)

 ⅓ cup of oil

 4 eggs

 1 tablespoon of baking powder

For coverage (optional):

 1 cup of cupuaçu pulp

 ½ cup of sugar (80 grams)

 chopped chestnut

How to make cupuaçu cake:

Beat the sugar, cupuaçu pulp, milk, oil and eggs in a blender until you get a smooth mixture.

Tip: For this recipe you can use fresh or frozen cupuaçu pulp. If using frozen pulp, let it thaw first.

In a bowl mix the flour with the yeast, add the ingredients from a blender and mix everything well.

Because of the cupuaçu, the cake sticks a little to the mold and can break when unmolding, so see how to line the mold with paper and put the dough in it. Place in a preheated oven at 180ºC for 40 minutes or until you chop a toothpick in half and it comes out clean.

Tip: We recommend using a medium round cake pan with a hole in the middle.

Optionally prepare a cupuaçu syrup to cover the cake: place the cupuaçu and sugar in a pan and stir until dissolved. Let it cook for 15 minutes, stirring a little every minute so as not to burn at the bottom, until it turns into a golden jelly. Turn off and let cool.

Remove the cupuaçu cake from the oven, let it cool a little before unmoulding and you're done! If you want, add the syrup prepared in the previous step, sprinkle chopped chestnuts and serve it with a cup of coffee or tea. Bon appetit and let us know in the comments what you think!
